Italian Stir Fry

Hey Y’all,
While doing the Daniel Fast, I learned to appreciate some delicious meatless meals. This is one of my favorites that I continue to make. Hope you enjoy and please leave feedback below!

Italian Stir Fry
2 cups whole grain Brown Rice
3 cups vegetable broth
3 tsp olive oil
1 chopped red bell pepper
1 onion chopped
1 can of diced tomatoes
1 can palm hearts – cut into 1 inch pieces
1 can artichokes – quartered
1 can of English peas
1 bunch of asparagus cut into 1 inch pieces
Salt and pepper to taste
½ tsp Turmeric
2 tsp minced garlic

1. In large skillet pan heat the oil over med-high heat. Add the onion and cook about 5 minutes. Add bell pepper, tomato, and garlic. Cook another two minutes.
2. Add salt, pepper, paprika, turmeric, and rice. Stir. Add vegetable stock and bring to a boil. Continue cooking until the rice absorbs most of the liquid (about 10min).

3. Stir in peas, asparagus, palm hearts, and artichokes. Reduce heat and simmer, uncovered, for 15 minutes. Remove from heat and let stand for a few minutes before serving.
