Zesty Zoodles Recipe

Recently, Aaron and I completed the 21 Day Daniel Fast. With the Daniel Fast you become vegan with some extra restrictions involving sugar, leavened bread, and alcohol. We chose to fast together and I am so grateful that we did. Fasting is a spiritual discipline and allows you to become quiet before the Lord and to listen to the Holy Spirit. We focused on our future and through the fast I really learned to trust God. It may have taken me 30 years (better late than never), but I see how good He is and how good His plans are for each of His children. We just have to take His hand and trust!

One of our favorite meals that we prepared was with Zucchini Noodles. It is a light, healthy, and very fulfilling meal. You will need a vegetti or some sort of spiraler to aid in making your noodles.

Ingredients-

6-8 Medium Sized Zucchini (I would go with 8 if you would like enough for leftovers the next day)

Lemon Juice

Fresh Spinach or Kale (sometimes I used both)

6 Medium size Tomatoes

Cherry Tomatoes (optional)

Garlic

Pesto

Olive Oil

 

Directions-

  1. First, you will spiral out your Zucchini using a Vegetti or any other type of vegetable spiralizer. You can just slice your zucchini if you wish, but we preferred the noodle texture.
  2. Next using a large skillet, pour 2tbsp of olive oil, 1 tsp of minced garlic, and sauté your spinach or kale until wilted on medium heat.
  3. Slice your tomatoes while the spinach is cooking.
  4. Once spinach is cooked, add your zucchini noodles. Keep heat on a medium setting, while stirring often.
  5. Once zucchini is cooked, drain excess water/oil.
  6. Add lemon juice (to taste) we use about a 1/3 of a cup. You can use more or less depending on the taste you prefer.
  7. Add tomatoes and stir frequently on medium heat setting. Add salt and pepper to taste.
  8. Add 2 tbsp of pesto. Mix well and serve! We also toasted Ezekiel Bread to have with ours.
